Roasted Porchetta

Made from Italian meat with rosemary, spices and Tuscan garlic, it is cooked slowly in a wood-burning oven. Delicious and soft, with an unmistakable flavour, it goes wonderfully with home-made bread after heating it in the oven, or tossed in a pan with a drizzle of oil, to bring out all its fragrance.
