It is cultivated on the Castelluccio di Norcia plateau, on karstic loamy-clay soil, with long winters and spring frosts and short summers. The environment gives the product distinctive characteristics: very small grains, rounded and slightly flattened in shape, with an exceptionally skin. The color is naturally variegated.
