This is traditional, delicious pesto, that used to be made with a marble pestle and mortar, using the smallest leaves of PDO Genovese basil from the low hills, and that the locals in Genoa still make in their homes. Garlic from Vessalico with its delicate aroma and intense, slightly spicy flavour make it totally unique.

The best ingredients

Select ingredients: basil, olive oil and extra virgin olive oil, Parmesan and PDO Fiore Sardo pecorino, Mediterranean pine nuts, and PGI sea salt from Trapani, where the sea water evaporates in salt pans. The finishing touch is unique garlic from Vessalico, exclusively grown in the upper Valle Arroscia behind Albenga on the coast.

Genoese basil grows in the thin strip of land between the harsh mountains and the gentle sea breeze. The name "basil" recalls the word for "royal (herb)" from the Latin "basilicum". And pesto has always been a king in the kitchen.

The olive oil and extra virgin olive oil blend perfectly with aromas of the ingredients, bringing out the fragrance of the basil and complementing the flavour of the garlic from Vessalico, when added. The cheeses provide intense flavour. The Mediterranean pine nuts soften the bouquet and the PGI sea salt from Trapani adds a savoury touch.
